Made of native Alpine varietals, this sparkling wine is made by one of the oldest method around. The primary fermentation is stopped before completion, and a second fermentation occurs in the bottle with preserved grape must. The wine is not disgorged or sulfured. Truly a special wine that brings you back in time!

The color is bright, deep and clear ruby-red. On the nose it is dense with strength and power. Aromas are focused on the red fruit such as morello, blackberries and red cherry coupled with dried herbs, spicy aromas and a mineral touch. On the mouth it has medium-plus body with an intriguing acidity and very qualitative tannins. Flavors of red fruits, earth and minerals.

Hungarian Brut! 100% Chardonnay from a single vineyard. Refreshing citruses, green apple, a touch of almonds and creamy, biscuity notes.

There were only three barrels of Dubay and not at all surprisingly, it was very well received. Perfumed, fresh and floral on the nose but much more powerful and structured on the palate, yet with excellent inner sweetness, , picking up a lovely orange top note on the supremely long finish.

Intensely expresses the terroir of the estate. Dry & intense, expressing freshness and minerality. Designed for all occasions, this pairs perfectly with shellfish, summer salads and is delicious all on its own.

Pale salmon in color, it is dry and light on the palate. This has a lovely and pure bouquet with an elegant style and a nice balance of roundness and acidity that seems more Pinot Noir-like than Provence. Smooth and clean with raspberry, wild strawberry and flower notes. Named ‘Biotiful Fox’ for its biodynamic/organic farming methods, and the wild foxes at the estate.

SO GOOD! Monks have been making wine here for hundreds of years where they grow the vines up a small post vertically, allowing for extremely high density plantings. It's one of those odd blends of both RED and WHITE grapes which gives it that light color... but trust me, this is no rose!
