The goal with Cortijo is to show a pure, youthful expression of Rioja Alta. Cortijo is a sort of “non-profit organization”. It is very difficult to find such a pure expression of Rioja at this price point.

Sustainable, fair trade mezcal production the same way it’s been done by their ancestors for nearly two centuries. Underground wood-fired pits, donkey-pulled tahonas (stone-wheel mills), fermentation in wooden tanks and small-batch distillation in copper alembics punctuate a process that has been and remains the life’s work of these mezcaleros.

Pisco is a brandy produced in winemaking regions of Peru and Chile. Made by distilling fermented grape juice into a high-proof spirit, it was developed by 16th century Spanish settlers. Caravedo Acholado is distilled to 86 proof requiring 18 lbs. of a blend of Quebranta, Italia, Torontel, and Albillia grapes to produce one 750ml bottle.

This very fine wine is rich in fruit, with a strongly mineral texture. It comes from the third terrace above the river Lot, where the clay and flint soil results in ripe fruit and balanced acidity. It will develop relatively quickly and be ready from 2018.

Blue volcanic rock and volcanic schist in the Vineyards which are farmed using organic methods and goblet pruning. All vineyard work is done by hand. 10 day maceration at cold temperature (8 degree celcius). Carbonic maceration with native yeast and without SO2 for 17-20 days. Fermentation occurs in cement tanks.
