This cider is fermented in two batches, with two strains of Belgian-style abbey yeast, at high temperatures. Silky, full-bodied cider. Nutty and bread-like finish.

A happy blend of two fermentations from the 2012 harvest. It’s a bit off-dry, with aromas of lime and lime peel, tart pie cherries, pear, pineapple, and some faint florality. The taste follows the aroma pretty faithfully, together with a bit of brine, quinine, and whisky. The finish does the same, with pleasant fruits and clean acidity to the end.
