Divona is a Celtic goddess of the sacred springs. The orchard is at the bottom of the deep and loamy valley floor, surrounded by forest on one side a stream on the other. The terroir lends itself to notes of baked apples, a whisp of citrus and clove, along with some classic French funk. The structure is driven by beautiful silky tannins that beg for a creamy cheese.

This wine is vinified via Methode Champenoise, aged on lees for 18 months, and dosaged with only varietal apple juice by arguably the greatest distiller in Europe. The idea of this cuvée is to erase the influence of vintage and focus solely on terroir. It is 50% each chardonnay and pinot noir and all from Mareuil-sur-Aÿ. Every year, 30% is racked off for secondary fermentation; it is aged sur latte prior to disgorgement at which point 30% new wine is added. Up until the 2010 vintage was added, the entire Solera was aged in steel.

The 2016 Syrah En Chamberlin Vineyard offers more tertiary notes of smoked plums, iron, shiitake mushrooms, forest floor, and peppery herbs. It’s concentrated, full-bodied, and balanced, with a big mid-palate, yet it glides across the palate with an almost Burgundian silkiness. This is a classic En Chamberlin that has all the Rocks funkiness and complexity, yet elegant.

“Chilean wine” conjures up an image of large wineries that produce multiple brands of clean, well-made, ripe and fruity international varietals. Deep violet in color, the wine explodes out of the glass with an extremely intense and heady bouquet of exotic Eastern flowers and wild strawberries and pomegranate. Once past the intriguing nose, the palate features wild berry compote, hints of roses, violets and geranium, a note of pink peppercorn and finishes very fresh with limited tannins. Ferdinando Principiano is one of the new crop of exciting young winegrowers to farm Piedmont. From a 3.5ha vineyard in the Boscareto Valley of Serralunga d'Alba the wine is fermented on indigenous yeast & crushed without addition of SO2. There are beautiful aromas of red fruit and deep spice. Silky tannins frame raspberry, rosemary and tarry notes that linger on the palate.
