These Remoissenet's really do well with age, especially in magnum form. 2008 was a great vintage, especially from 1er Cru sites that possess purity of fruit, focus and fresh acidity. Poissonot is a great site too. Rich, full and fantastic structure, though not quite as big/muscular Le Chambertin. It's a great bottle and we only have one.

This rare blend from a great producer still has some bounce in its legs, thanks to the structure of Nebbiolo and Cab and the vibrancy of Barbera. Mostly tertiary notes now, but with some freshness and a sweet/savory vibe. Unique.

Amphibolite is a metamorphic stone generally formed from gabbro or basalt with a high concentration of iron and magnesium prevalent in the vineyard over a bedrock of gneiss. "Subtle aromas give way to a palate that's concentrated, full-flavoured and explosive, with lots of texture and a rocky mineral tingle. Pear skin and a bite of Golden Delicious apple. Cashew richness adds depth. I love the saline finish."
