This wine is so good! Great salinity and perfect fresh limes. The wine maker practices all organic farming. The vines grow in sandy soil which lets the roots reach the natural water table. In turn, the wine maker dry farms this vineyard. The current vintage is 2013. The wine was aged in neutral barrel for two years then allowed to age in bottle for four years before being released. Delicious!

Viticulturist Isaac Cantalapiedra and his son Manuel work some 20 hectares of vineyards. Grapes are destemmed, and macerated 4-24 hours before pressing. The juice is wild yeast fermented 90% in steel vat, 10% in used French barrels, raised on lees for 8 months, and bottled with a light filtration and fining. The result is bewitching.
