Delightfully textured and smooth with balanced yet mouthwatering acidity, this wine veers into the green spectrum of Sauvignon; think nettles and elderflowers rather than flamboyant tropical fruits.

Big, black, and beautiful. La Negra is an oak-aged Russian Imperial Stout aged in 4 Roses barrels, brewed with our British Pale malt and an enormous amount of roasted malts. A 5-hour boil lends a big burnt sugar and raisin character while the intense bitterness gives the beer an incredible dark chocolate finish.

Vinification takes place in concrete tanks. The wine undergoes at least 6 months of aging in bottles before being sold. Vinification includes rapid destemming and pressing of the grapes, with 7-9 days of maceration in vitrified cement. This wine sees a minimum of 12 months in cement, then completes the aging in large oak barrels. Brilliant, ruby red in color, typical of Nebbiolo. Balsamic, spice, and roses are present on the nose, and the palate is well-balanced and cohesive, with acidity, minerality, fruit and earth.

This wine is 100% Grenache and produces a classically spicy, full-bodied wine that speaks clearly of the “garrigue” of the region. The grapes are destemmed before the fermentation and the cuvaison is on the order of three weeks duration. The wine is bottled without filtration after twenty to twenty-four months of “elevage”.
