Interwoven with notes of dry baquette, oak, and lemon peel, Grey Muse is influenced by the rustic, low alcohol wheat ales consumed by Belgian coal miners to help quench their thirst. Grey Muse is fermented and aged in oak barrels for several months with our wild yeast culture and then bottle conditioned.

Amber saison fermented in oak barrels with wild yeast. Inspired by the toasty country ales of northern France, theyfind this beer to have notes of citrus peel, praline, subtle anise, & pleasant earthy Brett. This beer will evolve with proper aging.

Scuppernong is a huge, white grape that’s bittersweet and well-known throughout the south. In addition, they added wild-harvested Sumac for added complexity, texture and a slight red hue. The beer is sweet, juicy, white wine-like, fruit-forward, tart and slightly viscous from the sumac. This thing is impossible to hate.

an explosion of fruit on the palate and well integrated, elegant tannins to support it. The layers of fruit and silky finish will leave you wanting more, whilst a lingering after taste makes for a rather attractive finish.

Toasted oak and crème brûlée. Fruit driven with lemon cream, Fuji apple, ripe pineapple, and baked pears. Rich and creamy with a strong oak presence, giving this wine lingering acidity, broad texture and a clean finish.

The Michlits family farms about 170 acres of vineyards, part of a much larger “mixed farm” where grains, fruit orchards, and vegetables are also grown along Lake Neusiedl on the border with Hungary. The grapes were picked by hand, sorted in the field. At the winery the grapes were sorted into a redwood fermenter, whole cluster, with 1% Riesling grapes added into the field blend. Pumped over once daily, pressed after a 11 day fermentation. Elevage in old (10 years) barriques for 18 months on fine lees. Racked to stainless steel one month prior with the addition of Riesling.

Distilled in a stainless steel pot still at London's Thames Distillery with 9 botanicals: juniper berries, coriander seeds, angelica root, orris root, orange peel, lemon peel, licorice, cassia and nutmeg. A dark mahogany color, and the aromas of vanilla, oak and caramel. On the palate it is slightly sweet with flavors of caramel and fruit followed with a smooth bourbon finish.
