.Fermentation and barrel aging in ideal conditions produced a deep ruby wine with inviting aromas of red and black ripe fruit, chocolate nib, vanilla, and cedar. The big, round entry expands to a mouth-filling plushness showing flavors of bright cherry and layers of texture. Tannins are seamless, well integrated, and more structured than drying. The natural sweetness of the fruit balances the bright acidity and follows through to the lingering blackberry and caramel-laced finish.

This collaboration was inspired by an iconic Trappist beer, Orval. It was fermented with historic Belgian ale yeast, dry-hopped with Mandarina Bavaria hops, and then bottle conditioned with the Brett. C for 9 months prior to release. A deep cut of some of the grooviest funk brewed with their friends at The Answer in RVA.

This bottle-conditioned farmhouse ale was fermented with our wild house mixed culture, then refermented on Southern Illinois-grown Chambourcin grapes and aged in a puncheon that previously held red wine. Slight earthy and mineral undertones in taste, and the aroma is dominated by fresh grape and vinous qualities.

Double matured in Pedro Ximenez cask wood, this is a mellow whisky. Intense peat and vanilla on the nose, with a raisin sweetness that checks the smoke. Grassy, peaty palate with a very salty tang. An Incredibly long finish, even by Islay standards. Fruit, peat and long-lasting oak. Very chewable.

White Dog is a small-batch whiskey distilled in a copper pot still and aged in an American white oak barrel for less than two weeks, allowing the essence of the grains to be enjoyed and the distiller’s craft to be recognized. Made from malted rye and corn mash, it is a great cocktail spirit that could be used in place of gin or vodka.

Light yeasty aromas, limey fresh fruit on the nose and rich creamy complexity on the palate. The exceptionally fine mousse contributes the freshness and finesse. This is President Obama's favorite sparkling! He had it poured at his inauguration because he loves it so much.

Their mix culture saison then ages it in Vin Santo barrels, which is an Italian dessert wine. The combo of both beer and barrel lends a dry citrusy saison with a little more body from its time in oak. It ends with a very distinct nuttiness from the barrels. The backbone of the beer is a minerality that emphasizes the dryness and adds an extra dimension to the citrus.

A farmhouse ale brewed with mesquite beans foraged from the Texas Hill Country, which have a brown sugar / molasses character. They took the beans, hand-crushed them, and added them late in the boil. The beer was then fermented in stainless steel with our mixed culture of brewers yeast, native yeast, and native bacteria.

Saison Rose is a mixed-fermentation farmhouse ale fermented with Pinot Noir grapes and aged on estate-grown cherries, strawberries, and raspberries. Complex in its mellowness, refined, reserved, saison-esque and wild enough without being too sour to drink on, its great!
