This blend by craft distiller High West uses bourbons aged from 2 to 13 years. The nose brings light caramel and sweet vanilla. This works great in cocktails but has enough complexity to stand on its own.

Infuse takes the approach of finishing their spirits with broken barrel pieces floating in the spirit to infuse it with that extra flavor. Their rye uses French oak, Ex-Bourbon cask staves and Sherry cask staves to create a rye that is far from traditional in its processes or its flavors -- hence the "heresy." What you get is a rich, layered body and a lush, fruity finish.

This is a bartenders' fave and a great bargain. The nose is sweet and spicy. The palate is grain forward with some nice bits of dark sweets mixing in there with some nice complementary spice notes. Old Overholt Bonded is good, well priced and has the potential to be a “modern gem” because it’s tasty neat, holds up to ice and makes for a great cocktail.
