A unique, quite dry sparkling rosé from organically grown grapes in Valpolicella, this crisp refresher is refermented in the bottle naturally and graciously expresses the delicate minerality of this northern Italy region. In the glass there are dew covered roses, wild berries, herbs and anise, hints of grass, hay and vibrant minerality. This is the perfect aperitif.

Enticing aromas of violet, woodland berry, loose vineyard soil, wild mint and a hint of spearmint shape the intensely fragrant nose. The tense, young palate is still nervous but already boasts finesse, showing wild raspberry, crunchy red cherry, white pepper and star anise.

We use absolutely no chemicals on our vines and in our cellar no addition or manipulation of any kind is done during the vinification process. The wines never have any So2, are never clarified, never fined and are allowed to spontaneouly ferment.

This blend of whiskey and peanut butter has become a party favorite in some circles, and bartenders no doubt love the challenge of concocting interesting cocktails with it. Pair it with Chambord for a PB&J cocktail, for instance. Or this is your path to the peanut butter old fashioned you've been dreaming about. It's also a great shooter, of course.

Halcon is an extraordinary, rocky site at 2500 ft in the Yorkville Highlands. High elevation, cold coastal breezes, extreme low vigor soils and dense plantings converge to grow a enigmatic style of Syrah mostly unknown in California. The grapes are all crushed by foot and fermented whole cluster.

Made from old vines in a single vineyard in the fabled Loire Valley in France. Selective handpicking for intact non-botrytised grapes yields a wine of pure clean highly crisp Chenin expression. Aging is done in oak barrels, 20% of which are new. A full bodied but mineral driven wine it tastes of Bosch pears and yellow apples with hints of smoked wood.

Muscadets made in Normandy, France all have a beautiful mineral acidity and almost salinity that make them one of the greatest pairings for fresh seafood in the world. The Chambaudière from Bruno Cormerais also has lovely weight and creaminess thanks to unusually granite soils, old vines, and a full 15 months ‘sur lie’ . Classic with oysters or dover sole!

This was inspired by the original Hochstadter's rock and rye recipe and a few other 19th century recipes, favored in saloons and, believe it or not, pharmacies (as a treatment for coughs and sore throats). Rock and rye was the precursor to the modern Old Fashioned, and this one has loads of bitter orange and honey backed by the rye whiskey. A great bottled cocktail to try.

Knob Creek introduced their rye in 2012. It has a nose of caramel, ginger and menthol, and a rich palate with rye spiciness, with more development of the vanilla, brown sugar and soft butter notes. Drying oak, white pepper and rye spice last on the finish. This is a nicely balanced rye that works great in cocktails and is also great neat.

The nose is redolent of wild, fruity aromas with notes of wild berries, plum and peach. The palate is bursting with flavors of candy; it is fleshy and velvety and very smooth. Long, harmonious finish. Our two main vineyards are planted on the hillside where they benefit from southwest – western exposure. The soil is rich in clay and well drained due to its stony nature.

As a local proverb puts it, “He who has no vines in Cailleret does not know the worth of Volnay”. A nose with notes of jammy black fruits, plum brandy, and peony. Palate: juicy fruit, beautiful concentration, and tannins that are still firm but which impart magnificent structure to this very beautiful cuvée. Matured in oak barrels for 18 months. Neither fined nor filtered.

Serve slightly chilled! On the nose you'll get black plum, red licorice, and raspberry with undertones of clove and hawthorn as it opens up in the glass. The palate is intense and fleshy with flavors of red plum, hibiscus, pomegranate, and cocoa powder and a playful spiciness on the finish.
