The Hilt is defined by its three maritime influenced vineyards in the southwest corner of the Sta. Rita Hills appellation: Radian, Bentrock and Puerta del Mar. Savory, dark and perfumed Pinot Noir. Lifted notes of rose petals, black cherry, dried tobacco, blood orange, sage, pomegranate and cracked white pepper.

From a selection of the brightest Chardonnay clones on the Estate, separately direct pressed or macerated and then barrel fermented using native yeast in 25% new French oak, the wine is then left to age on the lees for 19 months to develop natural complexity and terroir characteristics as it undergoes natural malolactic fermentation. Bottled with fine lees for added richness.

This Pinot Blanc is a wake up call. Fresh citrus, white flowers and jasmine pop out of the glass. The wine has an almost athletic length while providing crisp acidity and decadent textures, steely and bright, with minerality allied to just enough texture to elevate the wine. This wine fermented spontaneously for a long time—the wine didn’t go fully dry until the late spring following harvest. This long fermentation has given it another layer of complexity and nuance. 47 cases produced.

Yes, there is some gunk in the trunk, but don't be scurred, that's just some nutrients settling down. Chill and store the bottles upright and try not to shake them up too much - pour until you have about an ounce remaining at the bottom and sacrifice the leftovers to the gnats that be. Enjoy!

100% Palomino Fino from Andalusia near Cadiz. The grapes for this wine are fermented in fiber glass, then aged in the same container for 8 months. The wine is unfined, unfiltered, and shows notes of fresh pineapple and a somewhat oxidative character. Beautiful salty honey notes.

"Ripe red and blue fruits, savory herbs, licorice and a hint of candied rose on the perfumed nose. Gently chewy and precise on the palate, offering sweet cherry and black raspberry flavors that reveal hints of smokiness and baking spices as the wine opens up. Finishes long and sappy, with solid thrust, building tannins and resonating floral pastille and cherry notes."

With lower tannin levels and a light-bodied feel, this is fresh and fun, with flavors of red cherry, hints of orange peel, and a slightly bitter finish. Made from organically farmed Grignolino grapes, fermented with wild yeast, and aged in cement; it’s versatile with food, and great served slightly chilled.

This is made 100% from young-vine Pinot Noir and some Dornfelder, the grapes of which had no juice because of youth and the dryness of 2022. So instead of this being a mash of old skins and stems, it is in fact fresh grapes, with water added and then everything pressed and fermented. Does this switcharoo, new instead of used grapes, make a big difference? Honestly, I have no idea. But this is fresh AF and super low in alcohol, only 7.5%.
