After manual harvesting in crates and destemming, fermentation and aging take place in ovoid concrete vats. Bottling is done with a minimum dose of sulfur. You will need a little patience to let this cuvée reveal its full potential - it needs to be forgotten for 1 or 2 years in the cellar before being tasted around a dish of character, after a good decanting. The slight reduction at the opening gives way to fruity and peppery notes. The palate is slender, fine, with present tannins, with an extremely fine grain. The aromatic is on notes of black fruits and pepper. | |
