The name “Folatières” comes from folles-terres meaning “crazy earth” and refers to the eroding soil of this site. It sits high up on the hill above Clavoillons with meager soil resulting in a full-bodied wine with plenty of minerality and grip.

After a light filtering and cold settling of the lees, the wines are bottled with very little added sulfur. This tastes like a Mediterranean beach in summer, with soft lemon curd notes, lovely floral accents on a medium frame ending with a refreshing bright and long finish.

Lush and lightly tactile on the palate from briefly macerating the grapes, this is a blend of Grenache Blanc and Macabeu, with aromatics of sweet peaches and earth leading into flavors of pears, dried apples, and minerals. Made with organic grapes, and fermented in concrete with wild yeast.

Produced by Württemberg's leading star Andi Knauss is dry and easy drinking. Chemicals are eschewed in favor of natural treatments and a healthy planting of cover crops. This single vineyard Hiša (house) red is a barrel selection of pinot noir with a small addition of cool climate syrah. Made with a hands-off approach in order to express the fruit and the terroir of the vineyard in the glass. The wine shows a dusty cranberry nose with vegetal notes typical of Štajerska pinot noir, and the syrah adds a touch of black and white pepper.

Fun, casual, with forest berry aromas, this low alcohol piquette is an amazing naturally sparkling quaffable refreshment for any occasion. To make this wine, pomace from winemaking is soaked in water for 1-2 weeks and pressed again. This 2nd pressing then ferments naturally in the bottle into a refreshing frizzante beverage.

The nose shows abundant red fruits, lots of bright cherry along with bramble-berries, such as blackberry, cranberry, mulberry, and framed with hints of mineral/herbal characters such as graphite, cedar, and pencil shavings. The palate is vibrant and fresh, with medium tannin and beautiful acidity.

A rich, textured Chardonnay from grapes grown on a historical lieu-dit parcel of clay (glaise) and loam in Vrigny. This zero-zero experimental cuvée is vinified with native yeasts and no added sulfur or manipulation. Maceration on the skins in new barrel from Tonnellerie de Champagne gives this beautiful juice pristine stillness balanced with a mysterious, bottomless depth. Less than 1,000 bottles produced.
