The vineyards of Nerello for our Polpo Rosso are in Sambuca di Sicilia (Western Sicily). Growing method of vineyard is what we call vertical trellis. A light, juicy-in-texture, slightly earthy red wine. This one goes down easy.

Redbreast 12 Year Cask Strength is a wild and awesome ride of an Irish Whiskey. Even as a single malt whiskey, it plucks a number of traits from bourbon and rum that challenge and intrigue in ways no other bourbon, rye, or single malt whiskey does. Finishes in a unique toasted cinnamon bun flavor.

Kilchoman's Machir Bay is an excellent single malt Scotch whisky from the isle of Islay. The distillers use whisky which has been matured in ex-bourbon barrels and Oloroso Sherry butts, resulting in a well-balanced flavour profile, with highlights of vanilla biscuits, light fruit and wafts of warm peat smoke.

A limited-edition Lagavulin single malt made in collaboration with actor Nick Offerman. Matured for 11 years, this single malt has been finished for four months in casks that previously held Guinness beer from the Open Gate Brewery, creating layers of dark chocolate, roasted coffee and sweet caramel notes amid intense peat smoke, charred oak and salty sea spray on the palate.

The aromas waft like perfume, filled with floral notes, fresh-cut grass, orange sherbet, and honey. The palate is full and deep with toasted cream of wheat, more florals — heather and jasmine — and flamed orange zest. The finish is long with blooming wet wood and roasted pepper.

From California's rising-star, Alice Anderson. This wine is made entirely of Gamay planted at Shokrian Vineyard in Los Alamos, CA. This vineyard is farmed organically and has been organic herbicide free for many years. The Gamay is fermented 100% whole cluster in open top barrels. It's a red that can take a light chill and is sure to bring a smile to your face.

The Glen Grant Rare 18 Year Old matures in the highest quality, hand-selected ex-bourbon barrels and re-made hogshead casks, which deliver a vibrant golden color and rich floral and malty aromas. The complex palate of this liquid presents delicate notes of vanilla, butterscotch, and raisins with hints of spice and a long finish.

If you'd rather not bring the peat, this Islay scotch is for you. Great balance, round full body and heavy viscosity. The complexity shines through from careful malting instead of smoking and, it carries a nice weight from being non-chill filtered. ABV sits comfortably at 46.3% which is perfect for sipping, even neat.

NOSE: Sweet and floral, light vanilla custard, sweet pineapple, candied lemons, honeysuckle, sweet pastry.

PALATE: More pastry up front, lightly briney, sweet citrus and a buttery vanilla cream middle with some lightly smoky malt.
FINISH: Light, sweet flowers, lingering green wood.

This pretty little château was built by Emmanuel Tessandier in 1875 in Macau, which lies at the southern border of the Haut-Médoc. The winemaking at Château Lescalle is still done in the classic Médoc style. Extremely dense planting of the vines naturally limits the yields and increases the intensity of the fruit. Fragrant, smoky and juicy!
