This Friulano is a benchmark wine for the Collio. The single vineyard old vines are planted on the unique 'ponka' soil which offers steeper slopes, great drainage and provides intense minerality to the wines. Notes of fresh ginger and almond paste lie just below freshly crushed green apple and zime zest. Pair with well aged parmesan and a mountain of San Daniele prosciutto.

2021 PWC Garageland Rose21.99Willamette Valley, Oregon100 % Pinot Noir

Matt Berson of Portland Wine Company stole the name of this wine from a song by the Clash about how real art is so often created behind innocuous looking garage doors instead of in front of focus groups and marketing departments. This fresh and crisp Pinot rose is a blend of two younger vineyards in the northern Willamette. A great porch pounder or with seared salmon and greens

Ransom Old Tom Gin39.99Sheridan, OregonGin

Lovely malt and fruit mix with a spicy slightly sweet tail to it. Lots of weight and mouthfeel to it. Luscious orange, citrus and spice blend. While sweet, not as much as one would think from the old literature. Mild tingling on the lips and tongue. Very clean distillation and wonderful blending. Lovely, long lingering finish with lots of malt, fruit & a touch of tobacco.

Jack Daniel's Bonded Tennessee Whiskey34.99Lynchburg, Tennessee80% corn, 12% malted barley, and 8% rye, 100 Proof

The palate is boldly fruited with cinnamon apple, some citrus, and a layer of sesame, then a bigger nutmeg element and a hint of peanut brittle later in the game. Lots of caramel throughout. Lightly grainy as the initial fruit rush fades and the finish builds, with a sweet breakfast cereal element lingering. It’s not overwhelming in complexity but it sure is hard to put down. Aged minimum 4 years in single distillation season.

Jack Daniel's Triple Mash Blended Straight Whiskey37.99Lynchburg, TennesseeBlend of three straight bottled-in-bond whiskeys

Chewy and more malt-focused on the tongue, the whiskey takes a peppery turn late in the game on the palate, a rumbling note of roasted almonds, milk chocolate, coconut, and indistinct spice all in a slurry.

Frederic Cossard "Feel Good"48.99Jura, FranceSavagnin

A Burgundian master’s take on the legendary Savagnin grape. Domaine de Chassorney "Puits de Chaux"64.99Haut Côtes de Beaune, Burgundy100% Pinot Noir

“Puits de Chaux” is certainly one of the more lifted and fragrant red Burgundies you’ll come across from Cossard. Semi-carbonic, and aged in a single 1700 liter concrete egg. Crunchy, delicate, and joyous, with a nervy-acid backbone, so beautiful.

Afterwards the wine spends four and a half months in neutral oak barrels. Native fermentation, no fining, no filtration, no other modifications or additions except 10 ppm of sulfur dioxide upon barreling in September and 30 ppm of sulfur dioxide the week before bottling.

Swick Pinot Noir28.99Willamette Valley, Oregon100% Pinot Noir

This Pinot Noir, a blend of fruit from the Cancilla and Silvershot vineyards, is made with whole cluster semi-carbonic fermentation and spent about 10mo in 500-liter 5-year-old barrels. It's bottled unfiltered with minimal sulfur. To me, it hits the perfect balance of damp earth, gravel, underbrush to bursting red fruits, violets, and bright acidity.

This Mourvèdre is some of the latest-ripening fruit to be harvested in the season. Whole-cluster fermentation with light extraction results in a very fresh, elegant, acid-driven expression. Darker fruited (i.e. dark cherry) with some gamey meatiness.
