We mash Colorado corn, Colorado rye and malted barley; distill in our custom copper still (affectionately called "Steamy Wonder"); age a minimum of 2 years in new American oak barrels in our Denver rack house. The result: smoky aroma, caramel and baking spice notes, and a mellow finish.

The long aging time on the lees also allows for a wine that is softer around the edges, but still precise in its freshness. Salty, fluffy, with a fine acidic backbone.

A modern version of the wine Chiarli produced for his customers of his trattoria in the 1800s. Made by the ancestral method: still wine is fermented in the fall, rested through the winter, bottled in the early spring without filtration. When temperatures rise, the yeast continue the fermentation in the closed bottle creating a fizzy wine. Cherry and violet aromas take center stage on this savory sparkler!

Claus Preisinger is a now-risen star of natural wine in Austria. Château St Jacques d’Albas is a 26 hectare organic estate tucked in-between the Black Mountains and the Canal du Midi. Their Petit Saint Jacques is an exciting blend of Grenache, Syrah, and Carignan with dark notes of plums and violets met with hints of cherry, forming a long and spicy finish.

The wine shows fresh aromas of white peach, apricot, almond and lime-flower with a bit of white pepper. The palate is supple and dense with ripe pear, mineral and citrus flavors, with wet stone and caramel. The finish is ripe and long with firm lemony acidity.
