Sourced from vines averaging 60 years in age, this perfumed Pinot opens with penetrating aromas of blackberry, anise and earth. Concentrated in flavor and densely structured, it's ripe but elegant, highlighting rich, ruddy black-cherry and plum flavors. The finish is marked by a vein of stone and fine, penetrating tannins.

_Biancu Gentile_ translates to "pleasant wine" and the stainless steel treatment of the juice shows off the varietal's true, and very pleasant, characteristics: bright citrus and dried herb bouquet influenced by the maquis corse, the palate is like citrus mâche, offering invigorating acidity and minerality. Great as an aperitif, or with pasta salads or shellfish.

Aged for at least six months in very old George Dickel Tennessee whiskey barrels, our Reposado is an expression of the landscape, with flavors influenced by the floral, herbal, and citrus plantings we grow at Rancho El Pandillo. Hints of peach and grapefruit. Light notes of pepper and licorice.

This distillate, aged in a single barrel fashion for 11.5 months, showcases the artistry of barrel aging. The combination of 9 months in re-charred American oak and 2.5 months in French oak has resulted in a masterfully crafted spirit. The interplay of vanilla, caramel, spice, and floral undertones creates a symphony of flavors that captivate the senses.

The Quetsche Tilquin à l’ancienne (6.4% alc / vol) is a spontaneous fermentation beer obtained from the fermentation of destoned fresh purple plums (variety Prune de Namur or Quetsche véritable d’Alsace) in a blend of 1, 2 and 3 years old lambics. The taste is slightly tart but also fruity and round It also has a slight dryness and plum brandy perfume from the skin of the plums

Collaboration brew with our friends at Side Project Brewing. We shipped each other our house cultures and each used both to ferment the custom saison recipe. We then aged the beer on a massive amount of Colorado peaches.

Grapes for this wine are grown in Monte vineyard in Lessona and also in Brusnengo, from the "Mesola" area, which has an altitude 350 - 400 meters above sea level. The 'Rossonoah' is made up of 50% young Nebbiolo vines, 40% old Croatina vines and 10% Vespolina. 5 day maceration period for the Nebbiolo.

Light, bright, tart and slightly funky with strawberry jam, bright red fruit, aromas of flowers and savory herbs. Fine structure built on acidity, minerality and gentle tannins. Yum!

The 2021 Grenache Blanc Thompson Vineyard is bright and beautifully focused. Orchard fruit, mint, white pepper and jasmine are all nicely lifted. Slightly longer aging in oak helps build texture. This is beautifully done.
