Made with white and red indigenous grapes of production area, “Luigi” undergoes a single fermentation: it is bottled during alcoholic fermentation, when not all of the natural sugars of the grapes are yet exhausted. In this way the carbon dioxide produced by the end of the fermentation gets trapped in the bottle, giving its sparkliness to the wine.

Ducking Pet Nat stands as a distinctive skin contact sparkling wine crafted from 15-year-old Sercialinho vines thriving in sandy soils within the Amoreira da Gândara vineyard. The grapes are pressed, initiating a spontaneous fermentation in stainless steel lasting four weeks under temperature control and ambient yeast.

"Cuvée Christie" is an exception among Roilette estate wines in a few ways. The vines are "young" for Roilette, mainly in the 30-40 year range. They are not part of the original Clos de la Roilette vineyard and thus, more crucially, have more typical Fleurie soils with more granite than clay or manganese.
