A handful of local varieties add complexity to the ten percent of the blend that is not shared between Cinsault and the two Grenaches, Blanc and Noir. The unfiltered NV Fino July 2013 is a regular release showing the bottling date. This is the July 2013 version. It has a surprising aromatic nose, with flowers, apricots and peaches, almost tropical notes of candied fruits that would make the delights of a wide audience. The palate is round and light with pungent flavors of hay and dry straw, and a slightly saline finish.

A complex nose emerges as this wine opens up with chalk, soda, lemon and lime pith. The scents go well with the ocean breezes at Deep Sea’s tasting room on Santa Barbara’s wharf. It’s lean on the palate, with lime throughout and a bit of papaya on the end.
