We start with organic Fair Trade, Colorado Dept of Ag Certified 100% Organic Raw Blue Agave and ferment in small 250 gallon tanks. Each batch is distilled in custom copper stills hand-built in-house. Our Agave Reposado is then left to rest in newly charred and toasted Brand New North American White Oak barrels for 2 months, imbuing a hint of oak and vanilla notes.

The nose brings a slight smoked char and peanut-shell aroma with some vanilla maple and spiced barrel notes. The aroma is still bright with scents of the agave. On the palate, there's a nice depth to the spice with a touch of a tobacco and leather and has a sweet, rich taste. The finish brings some pleasant peppery and bitter notes, but does finish on the sweet side.

As with the nose, the oak here is fairly restrained and it adds more of a tannic, drying quality to this tequila over spice. Towards the end of the midpalate the white pepper increases in intensity, but it never gets too spicy or aggressive. The white pepper spice drives the finish which is medium, light, and ends clean.

The wine was tread gently by foot with 50% whole clusters and pressed after 20 days on the skins. It was aged in older puncheons.
