To make this wine, pomace from winemaking is soaked in water for 1-2 weeks and pressed again. This 2nd pressing then ferments naturally in the bottle into a refreshing frizzante beverage.

This single vineyard Hiša (house) red is a barrel selection of pinot noir with a small addition of cool climate syrah. Made with a hands-off approach in order to express the fruit and the terroir of the vineyard in the glass. The wine shows a dusty cranberry nose with vegetal notes typical of Štajerska pinot noir, and the syrah adds a touch of black and white pepper.

Lush and lightly tactile on the palate from briefly macerating the grapes, this is a blend of Grenache Blanc and Macabeu, with aromatics of sweet peaches and earth leading into flavors of pears, dried apples, and minerals. Made with organic grapes, and fermented in concrete with wild yeast.

The name “Folatières” comes from folles-terres meaning “crazy earth” and refers to the eroding soil of this site. It sits high up on the hill above Clavoillons with meager soil resulting in a full-bodied wine with plenty of minerality and grip.
