One of the most exciting estates to emerge from Chablis in recent years (Pattes Loup means "wolf paws"). Thomas Pico started his tiny estate in Courgis in 2005. Thomas immediately began a program of strict yield control and a conversion to organic viticulture. This is a rarity in Chablis. The resulting wines are true standouts in the region!

This family-owned distillery set out to create a solid and affordable everyday bourbon, and we think they succeeded. Aged at least two years and blended with Eldorado Springs water, the result is a bourbon that's easy to drink, with hints of vanilla and some spice, owing to the 20% rye in the mash bill.

Saturated purple color is followed by aromas of flowers, blueberries, blackberries, forest floor and spice. Claré JC is a unique wine, our take on the forgotten days of Nebbiolo, when it was enjoyed in its lighter and fresher garment. The winemaking protocol follows the 1606 writings of G.B. Croce, jeweler of the House of Savoia: the wine is bottled soon after the fermentation so to retain a gentle off-dry finish and a lovely energy.
