The soils are composed of volcanic glass fragments and sand over basalt. Hierloom apples are aged for a month after picking, milled and macerated for a week and pressed in a basket press traditionally lined with straw. The cider ferments and ages in barrel for a year. No additives. Sans soufrée. 180 cases produced.

Perhaps the greatest Cider producer on earth? Quite likely, and some of the most refined we've tasted during at time here at Joy. This comes from heirloom varieties We’ve got your Transparente (from Croncels), Reinette (from Champagne) and, of course the Raisin (also known as Rose) from Berne.

Nose is amazingly rich for Ribolla, with gooseberries and blackcurrants dominating over gentle piny and fine oaky notes. Very dry, medium bodied with touch of tannins and salty savoury character and lot of life. This is a homage to Ribolla, the oldest variety in Brda. It is excellent to approach now, but will be great in next decade until 2025.

The seductive aromas of cinnamon, black peppercorn, and Asian spices sit prominently upon underlying blue and black fruit. Herbaceous dryness accompanies rich meat and cigar box to bring spectacular depth to the nose of this cool climate Syrah. Mouthwatering acidity transitions flawlessly into robust, yet supple, tannin that persists through a long and fresh finish.

Pauline's Cuvee is made after the wines of the Right Bank. Merlot and Cabernet Franc lead the way to a soft supple wine with lots of character. Dark Ruby in color. 60+ year old vines. Deschamps vinifies his Chasselas in a manner exactly similar to the way he handles the Sauvignon Blanc with the Chasselas being the first of his wines to be bottled in the spring following harvest. Production is very limited and we rarely have the opportunity to purchase more than 1200 bottles of this strikingly fresh and dry wine.

This is 60+year old parcel of the Chasselas grape from which Deschamps produces his appellation “Pouilly-sur- Loire”. This parcel is a mix of clay on a deep base of limestone. Harvest is manual; the fermentation takes place in a mix of stainless steel and cement cuves. Only natural yeasts are used. Less than 100 cases imported to the US.

The domaine owns 8.30 hectares principally in the villages of Morey Saint Denis, Gevrey Chambertin and Chambolle Musigny. This charming white is sourced from a .60 hectare parcel in Gevrey. The vines were planted in 1943. There are a few (15%) inter-planted Chardonnay vines in the mix that contribute roundness and depth.

An subtle nose with plenty of fine autolysis aromas of fresh bread and sweetly fragrant yeasty notes, plus some gentle spice and chalky notes. The palate unleashes beautiful wild strawberry fruit flavors, super fresh, fleshy and pure. Great balance and depth.

Petillant is a vi d’agulla, the Catalan name for prickly wine. This vibrant and refreshing wine is the traditional summertime quaffer of the Penedès region of Catalonia, and it's perfect for drinking out of a porrón.

Tight and focused on the nose with clean red berries and oak. Expands a little on the medium-to full-bodied palate, but still rather closed, with an elegant framework of very fine, lightly firm tannin and a dense core of fruit. The balance of fruit and tannin already gives a long finish. Needs to unravel a bit, but the essential ingredients are very fine indeed.
