CapRock 7 year organic Bartlett Pear Brandy is grown, fermented and distilled in Delta County, Colorado. Aged 7 years in neutral french oak barrels.

The nose offers a wide range of dried and candied fruits with buttered, toasted touches and a hint of honey and caramel. The palate is dense with a nice balance and a powerful finish full of richness. To drink as a digestive, serve at room temperature, in the kitchen, flambé prawns or macerate a rabbit terrine with about 2 tbsp.

Exemplifying the particular characteristics typical of the Borderies growing area such as delicate floral aromas and a light palate, this cognac is a smooth transition from a VSOP cognac to an XO and has the combined aromas reminiscent of apricots and vanilla with subtle notes of violets. It finishes by leaving a smooth, supple, long, and memorable taste.

The harvest of grapes at Genot-Boulanger is always done by hand. In the case of Pinots, the grapes are completely de-stemmed. The fermentations start with native yeast and are done in stainless steel tanks. The wines are aged for 12 months in oak barrels, with around 20% new oak, then six months in vats before bottling. The red wines are neither fined nor filtered.

This Vouvray is classified as “Sec” or dry Vouvray and it comes from two flint-stone parcels. This is fresh and lively on the nose with elements of white flowers, honeyed pear, wild herbs, and just the slightest suggestion of smoke. On the palate this is juicy and bright with pear and lime zest notes mingling with hints of smoke and minerality. This is more than just a great introduction to Vouvray; this is a pretty great Vouvray for tonight or for a few years from now.
