Thomas (of Domaine Pattes Loup fame) farms these 2.5 hectares himself in Chablis all organically and vinifies with the same ‘hands-off’ mentality used at Pattes Loup. Fruit for this small-production cuvée is from a single parcel in Courgis, rooted into stoney clay-chalk soils.

From the oldest parcel of 120 year old Carignan. This domaine in an extremely dry, windy corner of France is producing some extremely delicious juice. The grapes go through 25-day carbonic maceration before a year aging in old barrels. Notes of rhubarb, black pepper and clove. Truly delcious!
