Crafted from two local white varieties, Grecanico and Insolia. Harvested by hand, the grapes undergo spontaneous fermentation with native yeast in concrete tanks. Skins are left for 15 days to extract plenty of color and tannins. Richly textured, bone-dry with vinous notes and hints of honey and citrus. The finish is crisp and the acidity pronounced. Yum!
