Senkin Brewery is now run by 11th generation brothers Kazuki Usui (Brewer) and Masato Usui (Toji). All of their sake are brewed in small batches, Muroka (unfiltered), Genshu (undiluted), and Nama (unpasteurized), as well as bottle aged in near-freezing temperatures.

Saison beer aged on whole Colorado plums at a rate of over 2 pounds per gallon. Bringing back old-world brewing techniques, we ferment and age our beers in vintage oak barrels with a mixed culture of saccharomyces, brettanomyces and lactic as the barrel aging process creates flavors that are impossible to create any other way.

Made from the fermentation of organic maple syrup from Québec in a blend of 1-, 2- and 3-year old lambics. They are made from worts brewed by Boon, Lindemans, Girardin and Cantillon. After the blend was made, it was further fermented in a stainless steel tank. Upon bottling, a small amount more of maple syrup was added to cause secondary fermentation in the bottle.

We take our fully matured 5-year straight bourbon and transfer it into Ruby Port barrels for 6 additional months. The Port finishing process adds a viscous mouthfeel with notes of candied cherry, dried plums, berries and chocolate on top of the traditional bourbon flavor characteristics.
