Pinot Gris makes red wine!

This wine is red fruited and snappy, with vibrant acidity and a distinct exotic spice undertone. It’s delicious now, though we suspect it should peak a few more years down the line. Unfortunately, yields were low and so we were able to bottle just over two barrels worth.

The new wine of the set is the 2021 David + Veronica. It’s a blend of 70% Pinot Blanc from Twelve Oaks and 30% Chardonnay from a warmer site in Yamhill. The goal was to make a wine that still had the brightness and vivacity we’re after, but that was delicious right now.

The fruit was picked for brightness and verve before being fermented with native yeast in neutral barrel, where it remained for 18 months. This has real minerality and tension, balanced by the naturally seductive fruit of the variety and a touch of texture from the long elevage. Only 48 cases were bottled.

High altitude grapes fermented in a combination of whole cluster, carbonic maceration and traditional post-press, this wine is a playfully satisfying soif. A huge vibrant nose of red fruit, and violets. Good acid lifts the mid-palate with notes of rhubarb, red cherry, orange peel, ash, crushed stone, mushroom, gunpowder, and flint. Almost Loire-like!

This is a classic, fresh crisp Dolcetto. Stainless steel aged to allow the wine to settle and come into balance, but maintain its fruit, acidity and freshness. Bright cherry and cranberry fruit with balancing acidity and soft round tannins- this screams for a pizza alla funghi! Very limited production from a single vineyard in Barbaresco. Get two (or more) while they last.

100% Pinot Noir fruit from the town of Tonnerre, located 10 miles from Chablis. The grapes are hand-harvested. After a short maceration on the skins for color, the juice is fermented and aged in stainless steel tanks before undergoing secondary fermentation. The wine is aged for 9 months on the lees before it is disgorged. No dosage is added.

This comes from 25+ year old vines in a vineyard planted on limestone and clay soils in the town of Tonnerre (10 miles from Chablis). Burgundy wild-child Patrick Piuze crafts this Chardonnay from Tonnerre (just east of Chablis), vinifying and aging it in stainless steel. Look for classic Chablisienne salt and steely, chalky mineral here with lots of energetic acidity. Enjoy with anything from cheese to seafood and pasta, it's an extremely versatile wine.

Raffault is known for making *the* benchmark expression of terroir in Chinon. Olga's daughter Sylvie now runs production, adhering to traditional methods, using saignée method (bleeding the juice for the rosé from the ferment for the red wine that will be made later). This results in deeper color and concentration of flavor, highlighting the earth-driven terroir and finer fruit notes of the Cab Franc. Look for hints of papaya, red berries, crushed herbs and granite minerality on a clean, refreshing cantaloupe finish.

On the nose there’s lemon-lime, orange peel, strawberry, and a hint of cherry blossom. It’s medium bodied and bright and zippy and acidic with soft tannins adding some grip. There are flavors of lemon-lime, strawberry, and wet stone; finished with mouth-watering acidity just begging you to take another sip.
