A project form winemakers Jean-Marc & Eliane Lafage that shows a remarkably complex and mineral-driven expression of Chardonnay. This juice is split between new barrel aging (20%) and tank aging on viognier lees, which builds a rich and complex texture ("buttery" is too simple a word) that pops the stone-fruit-like warmth against a bright, crisp finish.

Named for the villagers of winemaker Maria Solorzano's Jalisco hometown and its infamous late night parties (_tecolote_ means "night owl"), this wine is a 50/50 partnership between Solorzano and Stolpman. This bottle gets its edge from the cool night air that tempers the hot days and the result is an opulent, multi-dimensional quencher; a smooth talker with a savory bite.

After spontaneous fermentation in cement vats, it is transferred to 50-hectoliter foudres for one year, then to old 225-liter barriques for an additional year, before being bottled without fining or filtering. There is a harmony of elements in the wines of Le Puy—a weaving together of acid, fruit, tannin, mineral and earth—that is spellbinding. Drink now!

Fermented in two ways with its rose colored skins: part is destemmed and fermented slowly in open containers while separately whole berries are placed in a concrete egg to spontaneously ferment.
