This is a wonderfully savory, meaty, dark fruited Rioja. Hints of black olives round out the distinctive flavor profile of this wine; any braised meat or beef stew would likely complement this wine nicely. Given the proportion of whole cluster maceration, as well as a relatively warm fermentation period and a brief extended skin maceration, this wine is built to age.
