This Method Ancestrale, or PetNat sparkling wine is a father/daughter collaboration to find a new use for an old vineyard of co-planted indigenous varietals. Gently pressed the juice is fermented together only partway to be bottled before completion allowing natural CO2 to develop. Enjoy with fresh shellfish, light pasta dishes or roast chicken.
