"Puro" pisco is made with one grape varietal. Santiago Queirolo was in Italian immigrant who settled in Peru and established a winery in 1880. Peruvian Pisco is distilled only once in a pot-still, no wood aging is allowed, and cannot have any alterations including dilution.
