“Aramonix” is a lovely expression of one of the Gard’s most slept-on varietals, Aramon. It favors warmer climates, and when heavily pruned, makes incredibly concentrated, spicy red wines. Winemakers like Forestier opt for a different approach, using it to create wines of deftness, with savory and herbal undertones. This is light red wine that still holds up with winter fare.
