Camilla Rossi Chauvenet, who took over her family's vineyards from the 1880's and converted them to organics, makes wines of patience. Working with older vines, slower natural yeasts and used French barrels her wines take their time finding themselves before she bottles. Likewise patience as the wine develops in the glass pays off with cherry jam and balsamic drizzled herbs.
