This rustic ancestrale method sparkling rose hails from a small organic family farm in Lombardy in Northern Italy. The grapes are hand-picked in September and fermented slowly in tanks until it's bottled unfiltered the next June. As the cellar temperatures rise the yeast awake and naturally carbonate the wine. Refreshing and pretty, serve with prosciutto and fontina piled high!
