Jo Landron and his brother Bernard have been making gorgeous Melon de Bourgogne (AKA Muscadet) in the loire valley for decades. This particular one sees 6 months on the lees and balances beautiful salinity with playful fruitiness, it's begging for fresh seafood. Pair with anything that reminds you of the ocean and especially oysters.
