The winemakers at Fossil & Fawn are absolutely obsessed with Pinot Gris and its potential as a "red" wine. If you let Pinot Gris fully ripen, the grapes pick up a beautiful pale color (Gris means Gray after all). This wine is made the same way they make their Pinot Noir- think of this more like a pale red wine than a feisty skin contact white.
