Olga's daughter Sylvie now runs production, adhering to traditional methods, using saignée method (bleeding the juice for the rosé from the ferment for the red wine that will be made later). This results in deeper color and concentration of flavor, highlighting the earth-driven terroir and finer fruit notes of the Cab Franc. Look for hints of papaya, red berries, crushed herbs and granite minerality on a clean, refreshing cantaloupe finish.
