Burgundy wild-child Patrick Piuze crafts this Chardonnay from Tonnerre (just east of Chablis), vinifying and aging it in stainless steel. Look for classic Chablisienne salt and steely, chalky mineral here with lots of energetic acidity. Enjoy with anything from cheese to seafood and pasta, it's an extremely versatile wine.
