Sour mash, distilled in a copper pot still, aged in American White Oak deep char barrels and finished with toasted Aspen Staves. Fresh baked breads, cinnamon, allspice, lots of pine and tree sap, maple, and oak come through on the palate. This is a medium length finish that has lots of pine, maple, cinnamon, and oak tannins.
