At Cascina Borgatta, Maria Luisa Barizzone and Emilio Oliveri center their practice on Respect: respect for the silt-sandy soil, respect for the old vines, respect for the process. They tended to the family vines for many decades before releasing their own wines and still, in their 70s, work with youthful enthusiasm. Their wines are equally full of youthful vigor, supple fruit and elegant spice.
