To create this wine, we select Chardonnays from our estate vineyards and ferment in barrel. Delicate flavors are preserved through whole cluster pressing, and prolonged yeast contact adds both texture and subtle toast aromas. In order to preserve acidity for meal pairing, we did not put this wine through malolactic.
