The Saint-Veran from Famille Paquet is a brilliant, bright, grassy, and citrusy expression from a region where you often find heavier expressions. It's got great saline and should pair with poultry, shellfish, and vegetables nicely. It ages in a mix of tank and barrel including about 10% new wood which adds the perfect amount of structure and complexity.
