Hand harvested, destemmed with spontaneous fermentation on the skins in cement vats. Aging continues in the same cement vat together with the fine lees until Summer 2021, before bottling without fining, filtering or SO2. A little hazy in the glass, not too fruity, super light bodied and a tad wild on the palate. A very unique wine!
