Biodynamic producer based in Vertus. This is 100% Chardonnay, with a dosage of 4g/L to give body and weight to balance the natural, very fresh acidity. Aged for two years on the lees and 40% coming from a perpetual reserve started in 2004, this has a wonderful combination of mature toasty, cooking apple aromas, a rich creaminess, and a drying acidic finish. Powerful and generous for a Blanc de Blancs, with a spicy finish.
