Bois d’Yver is originally Thomas Pico's father's label. Thomas (of Domaine Pattes Loup fame) farms these 2.5 hectares himself in Chablis all organically and vinifies with the same ‘hands-off’ mentality used at Pattes Loup. Fruit for this small-production cuvée is from a single parcel in Courgis, rooted into stoney clay-chalk soils.
