Viotti is practicing organic, harvests by hand, utilizes spontaneous fermentation, adds low levels of sulphur, and does not fine or filter. After a soft pressing, it ferments in steel vats at a controlled temperature and remains there until the end of the fermentation. Fruity, floral and spicy, with a delicate hint of musk.
