The mechanical harvest takes place in the morning. The harvest is destemmed and crushed then macerated in vats. The fermentation – with selected yeasts – takes place in steel vats, with particular attention paid to the temperature during fermentation. The pumping over, racking and maceration time are adapted according to the evolution of the tasting during maceration, in order to have fine tannins.
