Though this northern outpost of Burgundy is known more for its white wines, Pinot Noir flourishes just ten miles north-east of Chablis. Moutard crafts his fruit from 60-year-old vines, whose juice is matured for nearly eight months in 50% stainless steel vats and 50% in neutral oak vats. Minimal sulfur is used. Flush with raspberry, cherry, and strawberry.
